Summer is upon us and eating light is during the  hot months of the year makes us feel better. Salads are great, but sometimes they’re not as filling as we’d like.

And there’s no reason to start binging on this superfood – a quarter or half of an avocado is all you need.

Tomato & Avocado Sandwich

INGREDIENTS

Tomato, sliced

Avocado, sliced or mashed

Focaccia bread, sliced

Fresh Mozarella

 

DIRECTIONS

Place sliced tomato, avocado and mozarella on piece of focaccia bread for an open-faced sandwich. For a twist on this simple lunch, add a dash of oregano over the cheese and melt cheese in a toaster oven.

Did you know that nutritionally speaking, fresh mozzarella and part-skim mozzarella are basically the same in terms of calories, fat, and saturated fat? HOWEVER, the part-skim variety is packed with carbohydrates and has a lot more sodium. Stick with fresh if you're counting carbs or trying to reduce your sodium intake.
